Panaattu is a traditional food product from Northern Sri Lanka, especially the Jaffna region , made from the fruit of the palmyrah tree (Panai or Panamaram).The ripe palmyrah fruit pulp is extracted, shaped into thin layers or portions, and naturally sun-dried under the sun until it becomes firm and long-lasting. This traditional method makes Panaattu one of the earliest forms of dehydrated fruit, developed long before modern food preservation techniques.
